Grasse Flavour Day – Syrup Workshop

As you know, I give syrup workshops via Airbnb called “From Flowers to Syrup” once in a while. This time the European Flavor Association, short EFFA, has asked me to have an atelier at the Grasse Flavour Day 2018 in the South of France.

Because live cooking was not possible, I prepared 5 of my favorite syrups (cardamom, chili, orange blossom, smoked pepper and hibiscus) and the attendees of the conference could mix & match their own combination in a little empty bottle.

But before mixing your own bottle, you could try out the flavors on a wooden spoon. Of course, everyone wanted to create the nicest combination, which is always a pleasure to watch.

Additionally, next to my atelier was a great cocktail stand, where my syrups were used to spice up the cocktails. For instance: Gin Tonic with a touch of smoked pepper…. hmmm!

About 80 people from the entire flavor industry attended the conference. All of them could get a nice gift bag from In-Imitable with their own syrup mixture, a hand-written label saying which ingredients they used, and a leaflet mentioning ways how to use syrup.

Use it on your steak (instead of a cranberry sauce), or for your coffee (you probably heard about the new trend of lavender latte, that’s simply done with syrup), or on your ice-cream, fruit salad, cereals in the morning, smoothie, but also very nice in your salad dressing to give extra flavor! Just be creative!

In short, I had a great time, learned a lot, spread the love, and made people happy – what else do you want?!? Thanks to EFFA for the opportunity, and to IFF for sponsoring this!

But it is award winning Madame Munchie who is really creating a new category of edibles. These products not only use local North California’s organic, but also medicinal and gluten-free ingredients.

Their focus is on providing wellness, relief and delicious smoke alternatives for their patients. This is a very interesting development, as the only edible alternative is the space cake so far…

I lately noticed a lot of dairy product claims on the beauty shelfs. Things you would not expect in your facial cream!

For instance, Tony Moly’s Wonder Cheese firming cream contains extracts from Gruyere & milk protein.

It seems that everyone goes Matcha at the moment! I know it’s not particularly new anymore, but recently i see unexpected Matcha products popping up on your corner!

Edible cups – my childhood dream came true!

The zero-waste vibe continues… and even KFC plans to introduce the “Scoff-ee Cup”, an edible coffee cup that smells like grass and tastes like chocolate.

The product is still in the trial phase and will only be available in the UK. According to a KFC press release, the cup “has been made from a unique biscuit, wrapped in sugar paper, and lined with an indulgent layer of heat-resistant white chocolate.” As you drink the coffee in the cup, the white chocolate lining will slowly begin to melt.

But it doesn’t end there — “Scoff-ee Cups” are not only edible, they’re also… aromatic! KFC partnered with The Robin Collective, an experimental food company, to infuse the cups with “coconut sun cream, freshly cut grass and wild flowers” scents. Why? Well, the idea behind this is that these scents “evoke the positive memories we associate with warm weather, sunshine and summer holidays.” Sounds … delicious?

Dominique Ansel, the famous bakery chef from NYC, also released The Cookie Shot — a chocolate-chip vessel for cold milk — which got me very excited because it’s like all of my childhood dreams come true!

Charcoal Trend – but also to drink ?

Not sure whether i like this development… The charcoal trend can be seen in many different beauty applications since quite some time, but now there is a new generation! Many beverage companies push in the market offering this cleansing ingredient charcoal.

Botanic Lab in one of these companies. They have almost a scientific approach with their organic drinks. You can purchase online a variety of drinks also as part of a daily program. You choose a level of intensity such as “soft cleanse” or “hard cleanse” and the mixture of greens and roots will re-boot your system. A daily program costs around 40 Pound.

The L.A. based company called Juice served here also followed the trend by offering a charcoal lemonade. They even claim ‘activated charcoal’… Similar to the Botanic Lab, they also provide you with daily or weekly cleansing programs.

Edible paper – the raw food trend ?

If you ever ‘eaten something with your eyes’ from the pages of a cooking book, this amazing project from Renee Boute might be of interest!

“AGF Class 3” is a project with a story. Potatoes, fruits and vegetables are divided into three different classes within the Dutch agricultural sector. Class 1, the “perfect” products, which end up in the supermarkets. Class 2, these products deviate about 10% from the perfect product and are for sale on the market. In addition, Class 3 is distinguished. These products have a deviation of more than 10% and are not offered to consumers.

Materials of the book: Potato, carrot, onion, leek, parsnip, asparagus, pepper, eggplant, strawberry, apple and pear

With this project people are informed about the large amounts of fruit and vegetables that are rejected each season in a tasteful way. “I want to make these fruits and vegetables more visible to the consumers, so they can experience that there is nothing wrong with these products and that they don’t belong on the compost heap” Renee sais.

This goal is incorporated in a (cook) book, made of the rejected fruits and vegetables. These are processed into thin dried edible sheets that can be found in the book. They are the special ingredient of the recipes and therefore the icing on the cake.

Renee made it possible to actually turn the role of this 3rd class products: from compost to sustainable nutrition/raw food! Great idea!
